South Carolina Primary Risotto

Fresh shallots* and onion, chopped and
sauteed in
Unsalted butter,
which coats
Arborio rice.

The rice absorbs
several cups of
Homemade chicken stock, in which has been reconstituted
Several pinches saffron—
and to which has been added
Lemon zest—
White wine,
and water in which
Broccoli* and asparagus*
have been blanched.

When the rice is one bicuspid short of al dente,
Stir in
Romano cheese,
that broccoli and asparagus,
and serve with garnish of
Chopped fresh shallots and
Lemon juice.
